Which do you think would be more fun, but at the same time make money pking. I love 1 def pure's like range / dds pures but will i be able to make any money pking? Or should i go with a zerker ?

It entirely depends how good of a pker you are. If you are not good at pray switching, go with zerker, but you do have to risk more.

Zerker definitely. Having the extra defence helps with anything you'd want to do in game.

Zerker, Swizzbeats is correct. Having that defence is a must have and it makes everything else in the game so much more easier.
