Religion is apart of love. Islam is a complete way of life and for you two to be together Islam has to be there. What you're saying is religion isn't everything and it doesn't include love. I think maybe her parents are treating her at home too harsh and this is forcing her to change her views, or the parents haven't raised her the most Islamic way.

Running away and getting marriage will just more problems, it's best to leave her, if you really love her you'll let her have your choices. Converting for the sake of loving someone isn't a good thing to do, it's like you're just going to neglect Islam. If you really do love her you just learn about Islam, then maybe in a few years you can see her.
