How do I know it is safe? Can't the original owner simply log in over gamecenter and get it back?

no, that is what I would give you. I would give you the gamecenter and the iTunes account info and you would change it.

When they give you the account, and you change info they can always call itunes and take it back. But you will have the CoC still on your iPhone. And at that point you would chargeback.

Experience: I've sold 5 accounts

That account is worth 120-180 depending on buyer. Mortors are low cannons are low wiz towers are low, but walls are insane... If you maxed your defense you're talking 180-220
