I would say DH but I might be noobish

DH for best xp + ONLY if you're rich

Guthans..? no point rofl

 

SS for good to great xp , reduces less pots used

go for a sgs, as it restores p points with his special attack

SS with some armor that has good pray bonus's

If I would want to train defence; I would go for Guthan's in normal mode. 

For attack: Whip + Rune defender/Godbook with max pray bonus gear and Pray pots

For str: Same as above with D Scimi or SS depending on how wealthy you are.
