The only difference between hard and easy is the HP amount and points gained on the monsters. They don't hit hard or better.

Id go with hard.

I also like to know this, I always thought they'd hit more on hard mode?

"Hard mode doubles the hitpoints, attack, strength, magic, and ranged levels of the bosses where applicable. Their defensive stats remain unchanged."

Quoted from wiki. So they do hit harder

I'd definately do normal with those stats, incorrect information has been told that they wouldn't hit higher nor their def is higher on hard mode - the npc's are definately much more tougher in hard mode and you wouldn't get as much exp/hour when doing normal.
