I've downloaded the latest java several times. I do not see JDK 1.8 in Eclipse, only 1.7, this is what I have.

That is exactly what I was thinking, but it seems I have SE 1.7. What version are you running, Hydra?

I used Explv's GUI tutorial, but I keep getting an error. I'm guessing I'm using an outdated method.
